  • ½ bottle good red wine
  • 2 tablespoons crushed coriander seeds (or ground to a powder if you prefer)
  • 175ml sunflower oil for frying
  • 1kg of porks, cut into large cubes (or 4-6 pork chops)
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground pepper

Place the pork in a bowl add the wine and crushed coriander and marinate overnight

Drain and reserve the marinade.  In a large saucepan heat the oil over a medium high heat and fry the pork until browned on all sides, season with salt and pepper.  Pour in the reserved marinade and then bring to the boil.  Lower heat and simmer for 45 minutes or until meat is cooked.

Serve with pourgouri or boiled rice and Village Salad.
