Arnaki me Spanahi - Lamb with Spinach Print E-mail


  • 200ml olive oil
  • 1kg lamb, cut into large cubes
  • 1 onion, chopped
  • 3 cloves of garlic, chopped
  • 1kg spinach, washed
  • 1 lemon, juice of
  • 1 teaspoon salt
  • ½ teaspoon pepper


In a large saucepan heat the oil over a moderate to high heat, add the meat and sauté until browned.  Add the onion and garlic and fry until they are soft.  Cover the meat with the vegetable or meat stock and bring to the boil, cover pan and reduce the heat to simmer for one hour or until the meat is cooked.

Add the spinach, lemon juice, salt and pepper, stir well and cook for 5 minutes or until spinach is cooked.

Serve with boiled rice and a nice chilled rose wine.
