Fasolaki kai Patates yiahnista - Green Beans and Potatoes in Tomato Sauce Print E-mail


  • 330g olive oil
  • 2 onions, finely chopped
  • 3 cloves of garlic, finely chopped
  • 2 medium sized potatoes, peeled and cut in quarters lengthwise
  • 1 kg green beans, washed and trimmed (frozen beans can be used)
  • 4 ripe tomatoes, finely chopped or grated
  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper
  • 2 tablespoons fresh parsley, finely chopped

In a large deep saucepan fry the onions and garlic in oil for 5-7 minutes until translucent. Add the green beans and cook for a further 5 minutes stirring continuously.

Add the potatoes, the rest of the ingredients and 1 cup of water. (If frozen beans are used use less water).

Bring the sauce up to the boil, then lower the heat to medium low and cook for 30 to 45 minutes or until potatoes and beans are cooked.
