Kolokithopitta - Courgette and Fetta Pie |

500g courgettes, washed and grated

75g olive oil

1 large onion, finely chopped

2 tablespoons dill, finely chopped

250g fetta cheese, crumbled

250g Anari, crumbled

5 eggs, beaten

125ml milk
-
100g corn meal
-
1 teaspoon baking powder
Preheat the oven to 180C (350F/Mark4)
In a frying pan heat the olive oil over a medium heat, add the onion and fry until soft and translucent.
Remove from the heat and mix in the dill.
In a large mixing bowl, mix the corn meal, baking powder,
the onion mixture, the cheese, courgettes, beaten eggs and the milk. Mix
well.
Put the mixture in a well greased not very deep
baking dish and place it in the oven. Bake
for 45 minutes or until a skewer inserted into the centre comes out clean.
When cool cut the pie in serving portions.
Serve with tomato salad.
