Kolokithopitta - Courgette and Fetta Pie Print E-mail

  • 500g courgettes, washed and grated
  • 75g olive oil
  • 1 large onion, finely chopped
  • 2 tablespoons dill, finely chopped
  • 250g fetta cheese, crumbled
  • 250g Anari, crumbled
  • 5 eggs, beaten
  • 125ml milk
  • 100g corn meal
  • 1 teaspoon baking powder

Preheat the oven to 180C (350F/Mark4)

In a frying pan heat the olive oil over a medium heat, add the onion and fry until soft and translucent.  Remove from the heat and mix in the dill.

In a large mixing bowl, mix the corn meal, baking powder, the onion mixture, the cheese, courgettes, beaten eggs and the milk. Mix well.

Put the mixture in a well greased not very deep baking dish and place it in the oven.  Bake for 45 minutes or until a skewer inserted into the centre comes out clean.

When cool cut the pie in serving portions.

Serve with tomato salad.
