Kotopoulo me Koumandaria - Chicken in Commandaria Print E-mail

  • 4 chicken breasts, cut in thin strips
  • 1 tablespoon Corn flour
  • 125ml Koumandaria
  • 2 cloves garlic, finely chopped
  • 60ml oil for frying
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 onion, cut in rings
  • 1 green pepper, cut in rings
  • 1 red pepper, cut in rings
  • 4 tablespoons soy sauce
  • ½ teaspoon chilli sauce
  • 250g sliced mushrooms, fried in olive oil

In a medium sized bowl mix the chicken with the corn flour, add the Commandaria, salt and pepper.  Marinate for 2-4 hours. Drain the chicken pieces and keep the marinade.

Heat the oil in a large frying pan over a moderate to high heat; add meat stirring all the time and cook for 4 minutes, then add the onions and peppers and cook for a few minutes. 

Add soy sauce, the marinade and chilli sauce, stir and lower heat and cook for 10 minutes or until the chicken is cooked; add the mushrooms, stir and cook for another 5 minutes.

Served with boiled rice.
