Kotopoulo me Koumandaria - Chicken in Commandaria |

4 chicken breasts, cut in thin strips
- 1 tablespoon Corn flour
- 125ml Koumandaria

2 cloves garlic, finely chopped

60ml oil for frying

1 teaspoon salt
- ½ teaspoon ground black pepper

1 onion, cut in rings
-
1 green pepper, cut in rings
-
1 red pepper, cut in rings
-
4 tablespoons soy sauce

½ teaspoon chilli sauce

250g sliced mushrooms, fried in olive oil
In a medium sized bowl mix the chicken with the corn flour,
add the Commandaria, salt and pepper.
Marinate for 2-4 hours. Drain the chicken pieces and keep the marinade.
Heat the oil in a large frying pan over a moderate to high heat;
add meat stirring all the time and cook for 4 minutes, then add the onions and peppers
and cook for a few minutes.
Add soy sauce,
the marinade and chilli sauce, stir and lower heat and cook for 10 minutes or until
the chicken is cooked; add the mushrooms, stir and cook for another 5 minutes.
Served with boiled rice.
