Skourattopitta - Leek Pie Print E-mail


  • 200ml olive oil
  • 1kg leeks, washed and coarsely chopped
  • 4 eggs
  • ½ ltr milk
  • 125g flour
  • 1 teaspoon salt and ½ teaspoon freshly ground pepper
  • 4 tablespoons fresh dill finely chopped
  • 250g Fetta cheese grated or crumbled

Preheat oven to 180C (350F/Mark4)

In a medium saucepan heat oil over medium heat, add leeks and fry  for 10 minutes or until translucent, stirring all the time.  Remove from heat.

With a hand mixer beat the eggs, add milk, flour salt and pepper and mix well.  Add the cheese, dill and leeks and with a large spoon fold into the flour mixture.

Place the leek mixture in non stick baking dish and cook for 1 hour or until pie is golden brown and when a skewer is inserted into the centre, it comes out clean.
