Skourattopitta - Leek Pie |

200ml olive oil
- 1kg leeks, washed and coarsely chopped

4 eggs
-
½ ltr milk
- 125g flour

1 teaspoon salt and ½ teaspoon freshly ground pepper

4 tablespoons fresh dill finely chopped
- 250g Fetta cheese grated or crumbled
Preheat oven to 180C (350F/Mark4)
In a medium saucepan heat oil over medium heat, add leeks and
fry for 10 minutes or until translucent,
stirring all the time. Remove from heat.
With a hand mixer beat the eggs, add milk, flour salt and
pepper and mix well. Add the cheese,
dill and leeks and with a large spoon fold into the flour mixture.
Place the leek mixture in non stick baking dish and cook for
1 hour or until pie is golden brown and when a skewer is inserted into the
centre, it comes out clean.
