Kritharaki Yiouvetsi - Kritharaki Pasta |

- 250g kritharaki pasta (shaped like large rice grains)
- 1.5 litre of stock (can be made with water and a stock cube)
- 250ml olive oil

2 onions finely chopped

2-3 cloves of garlic finely chopped

3 ripe tomatoes grated
- pinch of sugar
- 1tsp salt
- 1/4tsp freshly ground pepper
- 3 tablespoons of Halloumi cheese, grated
Cook the pasta according to the instructions on the packet.
In the meantime fry the onions in oil, then add the tomatoes and remaining ingredients and cook for 10 minutes.
Drain the pasta thouroughly and add in the tomato mixture, mixing it well.
Transfer the pasta to a ceramic dish and sprinkle the Halloumi over the top. Put the dish in a very hot oven until the halloumi goes
golden brown.
Goes very well with roast meat!
