Cucumber and tomato salad - so refreshing Print E-mail


  • 3 large beef tomatoes
  • 1 cucumber
  • 1 small onion, finely chopped
    
For the dressing
  • 4 tablespoons olive oil
  • 2 tablespoons wine vinegar
  • 1 teaspoon dried mint
  • salt as required

Wash the vegetables and cut them into small cubes.  Mix them well in a bowl.  Cover with cling film and put the bowl in the fridge.

Just before serving make the dressing by putting all ingredients in a small jar and mixing it well. 

Pour over the salad and serve.

Variation1:    Add chopped green pepper - it goes nicely with this salad. 

Variation2:    If you like you can omit the dried mint and replace it with 1 tablespoon of finely chopped basil and 1  tablespoon of finely chopped parsley.
