Cucumber and tomato salad - so refreshing |

- 3 large beef tomatoes
- 1 cucumber
- 1 small onion, finely chopped
For the dressing
- 4 tablespoons olive oil
- 2 tablespoons wine vinegar
- 1 teaspoon dried mint
- salt as required
Wash the vegetables and cut them into small cubes. Mix them well
in a bowl. Cover with cling film and put the bowl in the fridge.
Just before serving make the
dressing by putting all ingredients in a small jar and mixing it
well.
Pour over the salad and serve.
Variation1: Add chopped green pepper - it goes nicely with this salad.
Variation2: If you like you can omit the dried mint and replace it with 1
tablespoon of finely chopped basil and 1 tablespoon of finely
chopped parsley.
